150g plain flour
1/4 tsp ground ginger
1 tsp ground cinnamon
Approx. half a nutmeg, grated
2-3 cloves, ground
75g butter
3 tbsp clear honey
Sift flour and spices in a bowl, rub in butter with your fingertips.
Add honey and mix gently to make a soft dough. Keep mixing, knead with your hands if necessary, but don't add more honey. The amount of honey is critical; too much, and the dough is sticky and impossible to work with.
Wrap in greaseproof paper/clingfilm and leave to chill for 30 minutes (in the fridge is fine).
Roll out the chilled dough, well floured, cut out shapes and place on greased baking trays.
Chill shapes for a further ten minutes, then bake at 180C for ten minutes or until biscuits are golden.
